David McCoy, Ph.D., has recently retired as the Vice President of Product Research after 7 years at the National Dairy Council (NDC), a division of Dairy Management Inc. (DMI). He was the leading scientist in the Innovation Center for US Dairy's Cheese and Sodium task force. The task force was comprised of over 30 cheese manufacturers, suppliers and universities. At NDC, He directed the cheese research program, provided scientific and manufacturing expertise to DMI's communication teams, and coordinated Dairy Application Laboratories that were associated with five universities. Prior to joining NDC, Dave was with Chr. Hansen, Inc., the leading culture and enzyme supplier, for 28 years. When he left, he was their Principal Scientist, North America. Dave has been an invited instructor at dairy manufacturing courses for many years. He lectured on cultures, enzymes, yogurt manufacture, probiotics, and Italian cheese manufacture at a number of universities for over 20 years. He has been a trustee of the American Dairy Science Assoc. (ADSA) Foundation and a member of the board of directors of ADSA. Dave has a B.S. degree in Microbiology from Kansas State University and a Ph.D. in Food Science from the University of Illinois-Champaign.
