Nicole King is a graduate of the Illinois Institute of Art in Chicago in culinary arts. While working as a sous chef at Argonne National Laboratory, Nicole discovered her passion for nutrition and the science of food. A few years later, she earned a Bachelor’s of Science in Human Nutrition from the University of Maine. Currently, she is working on her Masters in Public Health degree from the University of New England while she works as the healthy foodservice coordinator for Eastern Maine Healthcare System in their Community Health and Grants department. Nicole led efforts for the CDC Sodium Reduction in Communities Program grant and developed an implementation toolkit based on the lessons learned. She continues to use this experience to expand upon and continue efforts to make hospital foods healthier through the CDC Partnerships to Improve Community Health grant at EMHS.
